Ingredients:
- 1 lb beef stew meat, cubed
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 4 cups beef broth
- 1 can 14
- 5 oz diced tomatoes
- 1 cup diced potatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp ground black pepper
- Salt to taste
- 1/4 cup chopped fresh parsley
Instructions:
In a large pot, heat vegetable oil over medium-high heat
Add beef stew meat and brown on all sides
Remove from pot and set aside
In the same pot, add onion and garlic
Saut until fragrant
Add carrots, celery, and bell peppers
Cook until vegetables start to soften
Return beef to the pot
Add beef broth, diced tomatoes, potatoes, thyme, oregano, black pepper, and salt
Bring soup to a boil, then reduce heat to low and let simmer for 45 minutes to 1 hour, or until beef is tender and flavors are well combined
Stir in chopped parsley just before serving
