Ingredients:
- 1 medium cauliflower, chopped into florets
- 2 tablespoons olive oil
- 2 teaspoons curry powder
- Salt and pepper to taste
- 4 whole wheat wraps
- 1 cup hummus
- 1 cup shredded carrots
- 1 cup baby spinach leaves
- 1/2 cup diced red onion
Instructions:
Preheat the oven to 400F 200C
In a large bowl, toss the cauliflower florets with olive oil, curry powder, salt, and pepper until evenly coated
Spread the cauliflower on a baking sheet lined with parchment paper and roast in the preheated oven for 20-25 minutes, or until tender and lightly browned
Warm the wraps in a skillet or microwave
Spread each wrap with a generous layer of hummus
Divide the roasted cauliflower, shredded carrots, spinach leaves, and diced red onion evenly among the wraps
Roll up the wraps tightly, folding in the sides as you go
Slice the wraps in half and serve immediately, or wrap them in foil for a portable meal
