Ingredients:
- 2 medium zucchinis
- 1/2 cup low-carb marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup sliced pepperoni
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions:
Use a spiralizer or julienne peeler to make noodles out of the zucchini
Set a big pan on medium heat and add the zucchini noodles
For two to three minutes, until slightly softened
Toss the zucchini noodles with the marinara sauce in the pan until everything is well mixed
Spread out the shredded mozzarella cheese on top of the sauce and zucchini noodles
Put the slices of pepperoni on top of the cheese
Put the lid on top of the pan and cook for 5 to 7 minutes, or until the cheese melts and bubbles
Then take the pan off the heat and add the pizza pasta
Top it with the grated Parmesan cheese and dried oregano
If you want, you can add salt and pepper to taste
Enjoy while hot
